It is made by wrapping a corn or flour tortilla (flat bread) around a filling and covering it in chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations. Usually coated in chilli sauce, there are many other sauces that are used to provide variety, and one may even garnish with salsa, cilantro, tomatoes, onions and lettuce. How to Make Enchiladas in the Oven

Ingredients:

  • 12 tortillas corn
  • 1 cup shredded cheese, cheddar/monterrey jack
  • 2 cloves garlic
  • 1 (28-oz.) can stewed tomatoes
  • 1 tbsp. olive oil
  • 1 cup salsa
  • 1 red onion, chopped
  • Filling of your choice

Steps:

  1. The first step is for you to decide what will be the filling in the enchiladas. First pick a meat of you your choice, and then add the other ingredients. You can use shredded chicken breast, ground beef or cooked crumbled chorizo to which you can add (some or all) shredded cheese (options include cheddar, longhorn or monterrey jack), black beans, corn, onion and tomato, chilli and cottage cheese. Combine the ingredients you wish to use as a filling in a bowl and set aside.
  2. If you are using corn tortillas, soften them by heating them quickly on a hot skillet or a microwave, which will make them less likely to tear. Place the warm tortilla on a flat surface and spread some enchilada filling on the bottom third of the tortilla. Don’t go all the way to any of the edges. Lift the bottom edge of the tortilla, and fold it over the filling, and continue to roll it. Then carefully transfer the tortilla to a baking dish, seam side down. Repeat this procedure with all the tortillas.
  3. The best way of how to make enchiladas sauce is in a skillet. Lightly warm olive oil in a large skillet and add in the onion and saute for five minutes. Then add in the garlic and after about a minute, add in the salsa and stewed tomatoes. The sauce should thicken in a few minutes.
  4. Pour the sauce generously over the enchiladas, and cover with shredded cheese. Bake at 350°F for 15-20 minutes by which time the cheese has melted and the sauce is sizzling. Take the pan out of the oven, and use a large spatula transfer the enchiladas to the plate. You can serve them along with a meal of rice and beans.

To prepare the beef filling, chop up a cooked flank steak into very small cubes (or shred it), and cook in a little oil for 1 to 2 minutes. Toss an appropriate amount of cilantro and onion into the pan, and cook for another 5 minutes. Take it off the heat and generously sprinkle with a mixture of monterey jack cheddar cheese and mix.
