How to Cook Chicken Piccata

How to Cook Chicken Piccata

This is chicken piccata recipe, one of my favorite dishes. It amazed me of how easy, fast and delicious of making lemonade chicken piccata. Chicken piccata is a standard Italian American dishes and become part of every home cook’s repertoire.

This is great for any occasion like thanksgiving, potluck, fine dining at your house, etc.
Ready? Here we go

Ingredients:
3 or 4 skinless and boneless chicken breast (1 ½ pound total)
2 tbsp grated parmesan cheese
½ cup flour
Salt and paper
4 tbsp olive oil
4 tbsp butter
½ cup chicken stock
3 tbsp lemon juice
¼ cup brined capers
¼ cup fresh chopped parsley

Make sure the chickens are not too thick; you might want to cut /butterflying them into 2 piece and pound them to ¼ inch thickness
Mix together each of those chicken with salt and pepper, flour and grated parmesan. Dredge them thoroughly in the flour mixture, until well coated.
Heat up the pan with virgin oil and 2 tbsp of butter and add the chicken ( make sure don’t crowd the chicken), let just cook for about 3 or 4 minute until the chicken get brown. Brown well of each side for about 3 minute.
Get the chicken out of the pan to the reserve place cover with aluminum foil while we prepare the sauce
Add the chicken stock, lemon juice, and capers to the pan. Use a spatula to scrape up the browned bits. Whisk in the remaining 2 tablespoons of butter. Put back the chicken to pan and mix with the thick, nice and rich sauce poured over the chicken. Sprinkle with parsley.

This recipe is just a chicken, beside you can add and decorate them by adding a carrot, bean, or potatoes.

The basic rule of thumb never to be forgotten when you cook chicken breast is that, when you use moist heat, use low heat for a longer period of time and when you use dry heat, use high heat and cook for a shorter period of time. If you cook the chicken on high heat, when you use moist heat, chances are high, that the chicken will melt in the liquid you use to cook it. However, if you cook chicken breast, on high heat for a longer period of time, then the chicken breast will become very dry and you may not be able to eat it. So that you have juicy, moist chicken breast, it is recommended, you brine it, before cooking. Healthy Ways to Cook Chicken Breast

Before we see what are the healthy ways to cook chicken breast, a lot of us have a question about how long to cook chicken breast. To cook chicken breast with bone weighing about 6 to 8 oz, you will require 30 to 40 minutes to roast at 170 degrees Fahrenheit and about 10 to 15 minutes to grill. If you use chicken breast without the bone, at 160 degrees Fahrenheit, you will need 20 to 30 minutes to roast and 6 to 8 minutes to grill about 4 oz of chicken breast. Cook Chicken Breast in Oven

Ingredients

Chicken Breast 8
Onions (sliced) 2
Tomato Soup (condensed) 1 cup
Water ¾ cup
Vinegar 3 tbsp
Worcestershire Sauce 2 tbsp
Cinnamon ¼ tsp
Paprika 1 tsp
Black Pepper ¼ tsp
Chili Powder 1 tsp
Cloves ¼ tsp
Method

Combine onion slices, tomato soup, water, vinegar, Worcestershire sauce, cinnamon, paprika, black pepper, chili powder and cloves in a sauce pan.
Bring all the ingredients to a boil, but do not forget to stir occasionally.
Arrange the chicken breast pieces in a oven-proof cookware.
Pour the sauce, you just made over the chicken.
Cover the chicken breast for about an hour at 350 degrees Fahrenheit.
Check if the chicken breast is cooked.
If not cover again and let it cook for another 15 to 20 minutes.
If you want drier chicken breast, then remove the cover during the last 15 minutes of cooking.
Cook Chicken Breast in Crockpot
I often used this method, when I want to have chicken breast for dinner. To cook chicken in a crockpot, you can either use chicken broth or use water. Depending on the availability, I make use of either one of them. Read more on boneless chicken breast recipes.

Ingredients

Skinless, Boneless Chicken Breast (split) 3
Cream of Mushroom Soup 1 can
Onion (chopped) 1
Garlic (minced) 3 cloves
Mushrooms 1 can
White Wine ¼ cup
Salt and Pepper as per taste
Method

Layer the chicken breast at the bottom of the slow cooker.
Spread salt and pepper on the pieces, as per taste.
In a sauce pan, combine cream of mushroom soup, chicken broth and wine and bring it to a rapid boil.
Then pour the sauce over the chicken pieces.
Drain the mushrooms and top the chicken pieces with the mushrooms.
Add garlic and onion and set the crockpot on high for about 30 minutes.
Reduce the heat to low (however, do not keep it on keep warm) and let the chicken pieces cook for about 7 to 8 hours.
Stir before serving.

Since both the methods to cook chicken breast that I have mentioned above do not make use of any oil, according to me these are the best methods of cooking chicken breast. Food poisoning is caused to someone when they eat or drink anything that is contaminated with one or more of the following – bacteria, viruses, chemicals, or toxins. The most common cause is contamination by some bacteria. Out of the many bacteria the most common are Salmonella, Staphylococcus, and E.coli.

Foods Most Likely to Cause Food Poisoning
It is practically impossible to tell the difference between normal and contaminated food. Both will look the same, smell the same, and taste the same. Foodstuffs that are almost always the cause of food poisoning are meat (beef, mutton/lamb, pork etc.), poultry (chicken, duck, wild game etc.), dairy products (unpasteurized milk, cheeses that were not treated properly, etc.), fish, and the deadliest and number one cause of food poisoning – shellfish. Besides these other sources include fresh fruit and vegetables (unwashed and eaten raw), and processed foods that have not been stored at the required temperature.

Places Most Susceptible to Food Poisoning
Home-cooked food and any raw fruits or vegetables eaten at home should not be a cause of worry as long as they have been washed and cooked properly. Even processed tin foods that have been opened are not causes of worry as long as they are kept at the right temperature. What you should be really careful about is food that is eaten at picnics, social gatherings outside the house (could include society gatherings, receptions, congregation gatherings, in general all gatherings that are held outdoors and the food is supplied by a caterer), and school and office cafeterias where the food suppliers are externally hired. The reason why food at these places are more susceptible to food poisoning is the duration of time they are kept in the open without refrigeration, allowing the bacteria and viruses to set in and multiply.

Who is at Maximum Food Poisoning Risk
Food poisoning is something that actually happens very often to most of us, but the level is usually so mild that it goes unnoticed. How many times have you just picked up that fruit and eaten it without getting it thoroughly washed. Along with the fruit, you have ingested ingredients that will food-poison you. But it is so mild that you barely notice any symptoms because the body’s defense mechanism has taken good care of it. If this same fruit were eaten by some infant or an elderly person, the severity could be very different. They have got a weaker immune system and even the slightest bacterial contamination could make them sick. Persons who should be very careful of what they eat consist of infants, the elderly, persons with kidney problems, diabetics and persons having weak immune systems. Pregnant women and breastfeeding mothers should eat food washed and cooked well, and avoid food that is even slightly doubtful.

What are the Symptoms of Food Poisoning
Food poisoning will usually occur within a few minutes to about 8 hours after you have ingested the culprit food. The symptoms could include one or more of the following.

–Abdominal cramps
–Nausea
–Vomiting
–Sudden and severe diarrhea
–Sudden unexplained fever usually accompanied by some other symptom
–Aching muscles
–Feeling very weak and tired for no apparent reason
–Severe headache

If the food poisoning is caused by a chemical or toxin, the symptoms will show faster than if caused by a bacteria or virus.

Reducing Chances for Food Poisoning
There are ways by which you can make sure that the food your family eats will not cause food poisoning. Following are a few precautions you can take.

–Cook all meat, fish, and poultry products thoroughly.
–After handling raw meat, fish, and poultry, always wash your hands with soap and dry before you touch any other food item. Also make sure to wash all utensils that were used while handling the raw meat.
–Do not cook and keep food without refrigeration for too long. Most preferably cook your food just prior to eating it.
–If collecting mushrooms from the wild yourselves, please make sure you know what mushroom it is. Certain mushrooms look very appetizing and are equally poisonous. Preferably avoid collecting and eating wild mushrooms unless you are an expert in mushrooms. Mushroom poisoning is known to kill over 50% who have consumed the wild and poisonous variety. No need to worry when you buy packaged mushrooms from the supermarket; they are the edible variety and always safe to eat.
–While eating canned food, never open a can that is dented or bulging. Bulging cans are a sure sign of bacteria infestation.
–Never eat food that smells or tastes even slightly unpleasant. It could be the beginning of bacteria infestation.
–While at an unknown place always eat freshly cooked hot food. If eating fruits and vegetables raw, make sure that they are thoroughly washed.
–Be careful while drinking water at unknown places. Drink boiled or bottled water as far as possible.
–Cook shellfish thoroughly. Many prefer eating shellfish that is barely cooked. Even though it is not life-threatening, the after-effects are usually seen pretty soon and is very uncomfortable. This is one of the leading causes of food poisoning.

Whenever food poisoning symptoms show, contact a physician immediately. The cause of the food poisoning could be nullified very soon. Delay in contacting a physician could lead to the spread and increase in the level of poisoning, possibly getting serious and requiring hospitalization.

Prevention is always better than cure. Maintaining proper hygiene and taking proper care while handling food will surely ensure that the cure for food poisoning will never be required.

How to Cook Scrambled Eggs?

In order to make scrambled eggs, you need six fresh eggs, six teaspoons of low-fat milk, one tablespoon butter, one teaspoon chili powder, salt and black pepper (both as per taste).
The next step involves whisking of eggs, which is the most important part of making perfect scrambled eggs. Break the eggs into a large bowl and add the ingredients. Now, beat the eggs in a tilted wheel motion, wherein the eggs are lifted, while beating. You can do this with a spoon or fork, or else, an electric blender will also serve the purpose. Don’t beat the eggs for more than two minutes. Stop the process, as you notice that eggs have turned frothy and evenly colored.
Now, heat butter in a non-sticking frying pan over medium heat. As the butter is about to melt completely, add the beaten eggs and tilt the pan so that the eggs spread evenly.
Never stir the eggs immediately. Once the base of the egg start setting, stir it with a flat wooden spoon or spatula. You have to push the cooked portions to the side of the pan, so that the runny portions also get cooked. This ensures that all parts are cooked evenly.
You may also break large lumps to small portions with the help of the spatula. Once the eggs are cooked evenly, toss it and cook for another thirty seconds.

How to Cook Eggs in Microwave or Oven?

In order to make scrambled eggs in a microwave, you have to put the ingredients (except salt and pepper) in a greased microwave safe bowl. Beat the eggs as per the procedure discussed above. Once you are done with the beating process, you have to place the bowl with the ingredients, in the microwave and cook them for about forty seconds on high. Remove and stir the mixture after every minute, so as to avoid formation of big lumps. Continue this till the eggs are cooked well. Once it is cooked, you can add salt, pepper and other ingredients of your choice. For cooking eggs in oven, preheat the oven to 350°F. Whisk the eggs and pour the mixture to a glass baking dish (preferably, a 9×13 dish), which contains melted butter. Bake this mixture uncovered for around ten minutes. Remove the baking dish from oven and stir the mixture. Once again, bake for another ten minutes or till the eggs are cooked well. Add the remaining ingredients and serve.
