Basic Method on Trussing a Chicken

Before going for the actual trussing, you need to remove the giblets from the cavity and set them aside. Secondly, you need to wash the chicken thoroughly and pat it dry. Now, stuff the chicken with your favorite stuffing, or with that required for the particular chicken recipe.
•The bird should be placed on its back, with its wings tucked under it.
•Now take a string that is 5 times the total length of the chicken. The middle of the string should be placed exactly under the tail.
•Now, bring both the sides of the string up, cross over the tail and wrap at the ends of the drumsticks.
•Pull the strings together to draw the legs of the chicken closer and cross to hold it securely.
•Flipping the bird over, pull the strings over the thighs and wrap around the upper part of wings.
•Bring both the wings closer and wrap them close to the body.
•Lastly, if you have a wish to tie the flap of skin around the neck, you can fold it with string and tie on the top.
Trussing a Chicken Without String

•The chicken should be placed on the table such that the breast should be down and the back should be facing you.

How much cooking oil is actually in a serving of fried food?

I am deep frying a serving of fries and chicken and wondered how much of the cooking oil is actually in the cooked food. I am using Canola oil and after the food is cooked and drained I am thinking that there isn’t much oil left in the food. What do you think?

depends on the food and its batter, the temperature you are frying at, and how long its fried

beer batter, or wet batters won’t hold as much as something like breadcrumbs, and the hotter and quicker you fry the less oil will be absorbed.

Ingredients

•Chicken Breast 8
•Onions (sliced) 2
•Tomato Soup (condensed) 1 cup
•Water ¾ cup
•Vinegar 3 tbsp
•Worcestershire Sauce 2 tbsp
•Cinnamon ¼ tsp
•Paprika 1 tsp
•Black Pepper ¼ tsp
•Chili Powder 1 tsp
•Cloves ¼ tsp
Method

•Combine onion slices, tomato soup, water, vinegar, Worcestershire sauce, cinnamon, paprika, black pepper, chili powder and cloves in a sauce pan.
•Bring all the ingredients to a boil, but do not forget to stir occasionally.
•Arrange the chicken breast pieces in a oven-proof cookware.
•Pour the sauce, you just made over the chicken.
•Cover the chicken breast for about an hour at 350 degrees Fahrenheit.

Cook Barbecue Chicken

Ingredients you would need are – tsp. olive oil, 1-1/2 to 2 pounds chicken breasts, thighs and drumsticks, 1/2 tsp. kosher salt, 1/2 tsp. Pepper and 1 cup barbecue sauce.

Step 1: To begin with, cut the chicken diagonally into 3 or 4 slices. Make sure that you cut the chicken from both the sides, so that it is cooked properly and absorbs the barbeque sauce well.

Step 2: Now preheat the oven to 350 to 375 degrees F. Meanwhile, take a skillet or a grill pan on a medium high heat, for heating olive oil.

Step 3: Season the oil with salt and pepper. As the grill pan heats up, add chicken and cook until it is seared brown on each side. Get it onto the baking dish.

Step 4: If you do not want to make the chicken heavy when it comes to calories, skip the step 3. Directly spread barbeque sauce on the cut pieces of chicken.

Step 5: By this time, the oven will attain the necessary temperature, so cover the dish containing chicken with aluminum foil and cooked for about 30 minutes. Check after half an hour to make sure that it is thoroughly cooked.
